Paradise, a traditional sweet

Paradise is an original traditional sweet that we love.

* 35 pieces Ornos (figs, unripe)
    
* 1 / 2 teaspoon of copper sulphate
    
* 4 tablespoons lemon juice
    
* 8 cups water
    
* Glass airtight containers
    
* For the syrup:
    
* 1300 g sugar
    
* 4 cups water
    
* 1 / 2 tablespoon sour
    
* 5-6 drops lemon juice
What we do:
Wash the Ornos and clean around the stalks them. With a sharp knife or tweezers to remove it from the bottom seeds, pressing lightly.
Then in a pot with water, boil them for 5-10 minutes to get the bitterness out. Repeat this process 3-4 times to drain the water and allow to cool slightly.
In a large bowl, add 12 cups water, dissolve well to copper sulphate and put them in Ornos for half an hour. They wash well and then put them in a bowl with 8 cups water, lemon juice and leave for another half hour.
Wash them again, we push a bit to go all the water and put them on a towel to cool.
In 'the meantime prepare the syrup.
In a large saucepan, heat water, add sugar and boil for 5-10 minutes.
Then add the Ornos, sour, lemon juice and boil for 15 minutes, skimming it with a spoon if necessary.
Remove the pan from the heat and leave the cake inside until the next day.
When completely cool put in airtight glass containers.
Advice To clean the Ornos necessarily have to wear rubber gloves because the milk of Ornos is caustic.
