Steak with Roquefort sauce

Wash the steaks and let it drain all the water.
Place steaks in a bowl, sprinkle with olive oil and salt and leave for 5-10 minutes.
If we have a barbecue, start fires and, when it formed a solid cinder, dilute the grill and cook steaks for 8-10 minutes on each side (note: there should be no flame when we put the steak to cook).
If we do not have barbecue can cook steaks on the grill in the oven for 15 minutes on each side.
At the same time, prepare the sauce Roquefort. In a saucepan, melt the butter and sift in the flour gradually, stirring constantly to prevent clotting.
Pour in vegetable broth in saucepan and stir in ricotta and next. Cover and let the sauce simmer for 5-10 minutes over low heat.
Remove sauce from heat and add the blue cheese cut into small pieces, stirring to make a uniform mixture.
